Best Ever Easy Vegetable Beef Soup

Ingredients:

  • 1 lb ground beef (or stew meat)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 (14 oz) can diced tomatoes (undrained)
  • 2 cups frozen mixed vegetables (peas, carrots, corn, green beans)
  • 2 cups potatoes, peeled and diced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 1 tbsp olive oil

Instructions:

  1. Cook the Beef:
    • In a large pot over medium heat, heat olive oil. Add the ground beef and diced onion.
    • Cook until the beef is browned and onions are tender. Drain any excess fat.
    • Stir in minced garlic and cook for 1 minute.
  2. Add the Broth and Veggies:
    • Add the beef broth, diced tomatoes, potatoes, thyme, basil, salt, and pepper to the pot. Stir to combine.
  3. Simmer:
