Raspberry Lemon Rolls

Ingredients

  • 1/4 cup granulated sugar
  • 2 tsp lemon zest
  • 1 tbsp cornstarch

  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice
  • 1 tsp lemon zest

Instructions

  1. Make the Dough:
    • In a large bowl or stand mixer, combine warm milk, sugar, and yeast. Let sit for 5 minutes until foamy.
    • Add the melted butter, egg, and salt, mixing until combined. Gradually add the flour and mix until a soft dough forms.
    • Knead the dough for about 5-7 minutes until smooth and elastic.
    • Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
  2. Prepare the Filling:
    • In a bowl, combine the raspberries, sugar, lemon zest, and cornstarch. Gently toss to coat.
  3. Assemble the Rolls:
    • Roll out the dough on a floured surface into a 12×18-inch rectangle.
    • Spread the raspberry filling evenly over the dough.
    • Roll the dough tightly from the longer side into a log. Slice it into 12 equal rolls and place them in a greased 9×13-inch baking dish.
    • Cover and let the rolls rise for another 30 minutes.
  4. Bake the Rolls:
    • Preheat the oven to 350°F (175°C).
    • Bake the rolls for 20-25 minutes, or until golden brown on top.
  5. Make the Lemon Glaze:
    • In a small bowl, whisk together the powdered sugar, lemon juice, and lemon zest until smooth.
