Creamy Lemon Squares Recipe

Ingredients:

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed

For the lemon filling:

  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract

For topping (optional):

  • Powdered sugar, for dusting

Instructions:

  1. Prepare the crust:
    Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it.
    In a medium bowl, combine flour, powdered sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared pan.
    Bake the crust for 18-20 minutes, or until it is lightly golden. Remove from the oven and set aside.
  2. Make the lemon filling:
    In a large bowl, whisk together the eggs, granulated sugar, flour, baking powder, and salt until smooth.
    Stir in the lemon juice, lemon zest, and vanilla extract until fully combined.
  3. Bake the lemon squares:
    Pour the lemon filling over the warm crust. Bake for an additional 20-25 minutes, or until the filling is set and lightly golden around the edges. A toothpick should come out clean when inserted into the center.
  4. Cool and serve:
    Let the lemon squares cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar. Cut into squares and serve.
