Cheesy Sausage Muffins
Ingredients:
- 1 lb ground sausage (breakfast or Italian)
- 1 cup shredded cheddar cheese (plus extra for topping)
- 3 eggs
- 1 cup all-purpose flour
- 1/2 cup milk
- 1/4 cup melted butter
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder (optional)
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
- Cook Sausage:
- In a skillet over medium heat, cook the ground sausage until browned. Drain excess fat and set aside to cool slightly.
- Prepare Batter:
- In a mixing bowl, whisk together eggs, milk, and melted butter.
- In another bowl, combine flour, baking powder, salt, pepper, and garlic powder. Slowly add the dry ingredients to the wet mixture, stirring until combined.
- Mix Sausage and Cheese:
- Fold in the cooked sausage and 1 cup of shredded cheese.
- Assemble Muffins:
- Divide the mixture evenly among the muffin tin cups. Sprinkle extra cheddar cheese on top of each muffin for a gooey finish.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
- Cool and Serve:
- Allow to cool slightly before removing from the tin. Serve warm as a breakfast or snack option!
