Cheesy Sausage Muffins

Ingredients:

  • 1 lb ground sausage (breakfast or Italian)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 3 eggs
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.
  2. Cook Sausage:
    • In a skillet over medium heat, cook the ground sausage until browned. Drain excess fat and set aside to cool slightly.
  3. Prepare Batter:
    • In a mixing bowl, whisk together eggs, milk, and melted butter.
    • In another bowl, combine flour, baking powder, salt, pepper, and garlic powder. Slowly add the dry ingredients to the wet mixture, stirring until combined.
  4. Mix Sausage and Cheese:
    • Fold in the cooked sausage and 1 cup of shredded cheese.
  5. Assemble Muffins:
    • Divide the mixture evenly among the muffin tin cups. Sprinkle extra cheddar cheese on top of each muffin for a gooey finish.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
  7. Cool and Serve:
    • Allow to cool slightly before removing from the tin. Serve warm as a breakfast or snack option!
