Cheesy Baked Vegetable Rolls Recipe

Ingredients:

  • 8 large lasagna noodles (cooked according to package instructions)
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 medium zucchini, grated
  • 1 medium carrot, grated
  • 1 cup fresh spinach, chopped
  • 2 cups marinara sauce
  • Fresh basil leaves (optional, for garnish)

Instructions:

  1. Preheat Oven:
    Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
    • In a mixing bowl, combine ricotta cheese, 1/2 cup mozzarella, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
    • Add the grated zucchini, carrot, and chopped spinach. Mix well.
  3. Assemble the Rolls:
    • Lay a cooked lasagna noodle flat on a clean surface.
    • Spread 2-3 tablespoons of the filling evenly over the noodle.
    • Roll it up tightly from one end to the other.
    • Repeat with the remaining noodles and filling.
  4. Prepare for Baking:
    • Spread 1 cup of marinara sauce evenly on the bottom of a baking dish.
    • Place the rolls seam-side down in the dish.
    • Spoon the remaining marinara sauce over the rolls.
    • Sprinkle the remaining 1/2 cup mozzarella cheese over the top.
  5. Bake:
    • Cover the dish with aluminum foil and bake for 20 minutes.
    • Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
  6. Serve:
    • Garnish with fresh basil if desired and serve warm.
