Ingredients:
- 8 large lasagna noodles (cooked according to package instructions)
 - 1 cup ricotta cheese
 - 1 cup shredded mozzarella cheese
 - 1/4 cup grated Parmesan cheese
 - 1 teaspoon garlic powder
 - 1/2 teaspoon Italian seasoning
 - Salt and pepper, to taste
 - 1 medium zucchini, grated
 - 1 medium carrot, grated
 - 1 cup fresh spinach, chopped
 - 2 cups marinara sauce
 - Fresh basil leaves (optional, for garnish)
 
Instructions:
- Preheat Oven:
Preheat your oven to 375°F (190°C). - Prepare the Filling:
- In a mixing bowl, combine ricotta cheese, 1/2 cup mozzarella, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
 - Add the grated zucchini, carrot, and chopped spinach. Mix well.
 
 - Assemble the Rolls:
- Lay a cooked lasagna noodle flat on a clean surface.
 - Spread 2-3 tablespoons of the filling evenly over the noodle.
 - Roll it up tightly from one end to the other.
 - Repeat with the remaining noodles and filling.
 
 - Prepare for Baking:
- Spread 1 cup of marinara sauce evenly on the bottom of a baking dish.
 - Place the rolls seam-side down in the dish.
 - Spoon the remaining marinara sauce over the rolls.
 - Sprinkle the remaining 1/2 cup mozzarella cheese over the top.
 
 - Bake:
- Cover the dish with aluminum foil and bake for 20 minutes.
 - Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.
 
 - Serve:
- Garnish with fresh basil if desired and serve warm.
