Ingredients:
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 cup fresh spinach (optional)
- 1/2 cup sun-dried tomatoes, chopped
Instructions:
- Prepare the Chicken:
- Season the chicken breasts on both sides with garlic powder, onion powder, paprika, salt, and pepper.
- Sear the Chicken:
- Heat olive oil in a large skillet over medium heat.
- Add the chicken breasts and cook for 5-7 minutes per side, until golden brown and cooked through.
- Remove the chicken and set aside.
- Make the Sauce:
- In the same skillet, add chicken broth to deglaze the pan, scraping up any browned bits.
- Stir in heavy cream, Parmesan cheese, Dijon mustard, thyme, and basil.
- Simmer for 5 minutes until the sauce thickens slightly.
- Add Vegetables:
- Stir in spinach and sun-dried tomatoes. Cook until the spinach wilts.
- Combine and Serve:
- Return the chicken to the skillet, spooning the sauce over the top.
- Simmer for another 2-3 minutes to heat through.
- Plate and Enjoy:
- Serve the chicken with the creamy sauce over rice, mashed potatoes, or pasta for a complete meal.
